Marinated String Beans (makes 4 servings)

Ingredients: 


½ pound string beans, tips cut off  
¼ cup water
2 cups tomatoes, seeded and diced  
2 teaspoons olive oil
5 cloves of garlic, peeled and cut horizontally
1 tablespoon balsamic vinegar
1 tablespoon dried basil
Salt and pepper to taste



Directions:


In a medium sized microwave-safe bowl, combine beans, tomatoes, garlic, basil and water. - Cover and microwave on high for 9 minutes until beans are soft. Let the bean mixture cool and then toss with oil, vinegar, salt and pepper. Serve hot or cold.
