Thousand Island Dressing (makes 8 servings)

Ingredients:

½ package tofu, firm
1 tablespoon honey
¼ cup plus 2 tablespoons ketchup
1 small shallot, peeled and chopped
3 tablespoons water
2 tablespoons sweet pickle relish
1 teaspoon Worcestershire sauce
2 teaspoons rinsed capers
2 tablespoons apple cider vinegar


Directions:

Combine the dressing ingredients and blend until smooth and creamy.
