Scrambled Eggs with Ham and Cheese (makes 4 servings)

Ingredients:


1 cup egg substitute
4 ounces low-fat slice ham, finely minced
1 tablespoon water
Butter-flavored cooking spray
4 ounces low-fat cheddar cheese, diced
Salt and pepper to taste



Directions:


In a small bowl, beat the egg substitute with water until frothy. Stir in cheese and ham. In a medium nonstick skillet, heat cooking spray until hot but not smoking. Pour in egg mixture, stirring constantly for 1-2 minutes until eggs form small curds that are soft but not runny and the cheese melts. Add salt and pepper to taste.
