Red Wine Poached Pears (makes 4 servings)

Ingredients:


4 Bosc pears
1/3 cup plus 1 tablespoon honey
1 750-ml bottle red wine, preferably merlot of Bordeaux
½ cup heavy cream
1 cinnamon stick
2 ounce goat cheese, softened



Directions:


Peel pears and use a paring knife to core each from the bottom, leaving stems intact. Set aside. In a medium saucepan, combine 1 cup of water, wine, cinnamon stick and 1/3 cup of honey. Bring to a simmer over medium-low heat, then add pears. Partially cover and simmer gently for 20 more minutes.

Remove pears to a plate and set aside. Continue cooking wine sauce for 15 to 18 minutes until reduced by 75 percent. Meanwhile, in a small bowl, whisk together heavy cream, goat cheese and remaining honey until soft peaks form. Set aside.

Place a pear in a shallow bowl and drizzle with 1 tablespoon wine sauce. Top with a spoonful of goat cheese cream and dust with a sprinkle of cinnamon. Repeat with remaining pears and serve immediately.

Pumpkin Whip (makes 6 servings)

Ingredients:


½ pint heavy or whipping cream
1 package sugar-free Jell-O butterscotch pudding mix
1 cup of milk
1 cup pure pumpkin puree
1½ teaspoon pumpkin pie spice

Note: do not use almond or soy milk as mousse will not set properly.



Directions:


In a small deep bowl, whip the cream using a hand mixer until stiff and set aside. In a large bowl, beat together pudding mix, milk, pumpkin puree and spices until thick and smooth. Add the whipped cream and fold in using the low setting on the mixer and finishing with a rubber spatula. Cover and chill.  Scoop into dessert dishes and garnish with additional whipped cream.

Chocolate Pudding (makes 4 servings)

Ingredients:


2/3 cup plus 1 tablespoon of Stevia in the raw
¼ cup Hershey’s cocoa powder
3 tablespoons cornstarch
¼ teaspoon salt
2¼ cup fat-free milk
1 teaspoon butter or margarine
1 teaspoon vanilla extract



Directions:


Stir together the dry ingredients in a medium saucepan. Using a whisk, gradually stir in milk. Cook the mixture over medium heat, stirring constantly until the mixture boils. Boil and stir for 1 minute.

Remove the mixture from heat. Stir in butter and vanilla extract. Pour into individual serving dishes. Serve warm or refrigerate for at least 2 hours.
